Sunrise is the best time. Flights run with licensed operators and authorised crews and depend on weather. Children under 6 are generally not accepted. Book a few days ahead in peak season. Launch sites are near the hotel; transfer times are shared before the flight. Photos are allowed; some areas may need a permit.
